Clear Tom Yum Quinoa Udon with Smoked Mackerel

“Quick & Easy short cut for a "Gourmet" Meal at home.
I personally prefer the Clear version more than the red ones.
Pre-cooked Frozen Smoked Mackerel from a Salmon ATM. After thawing, put it in a steamer for roughly 5 to 8 min to heat it up. It's on offer at $3.90/ piece.
Get the Chicken broth in with 2 cup water. Heat it till boiled. Add the chopped up Lemongrass in between.
Throw in the sliced red chili, bay leaves(substitute for the Lime Leaves as it's not available), sliced ginger & squeeze the lime juice in. Get in a bit of sugar & fish sauce/or/and soy sauce for flavor. I kinda add in too much fish sauce so it turned out too "fishy". 😂🤣. Continue to stir until the smell of Tom Yum starts to evaporate into the surrounding air. Now it's time to add the Quinoa Udon. It instantly soften & lowers itself into the spicy broth. Get a spoon in & taste the soup. Add more lime or sugar or sliced chilli as required by one's taste. I personally add a bit of chilli flakes into the final mix.
Last step is to plate everything up & you'll have a restaurant quality meal under an hour.”
